The health benefits of cabbage in one tasty dish.

INGREDIENTS

(For 4 persons)

  • 1 medium kale or white cabbage
  • 2 or 3 medium/large sized potatoes
  • 4 cloves of garlic
  • Chorizo Extra Sarta or Chorizo Barbacoa
  • 1 tablespoon sweet or hot paprika to taste
  • Salt
  • Virgin olive oil

Peel the potatoes, wash them and cut them into thick pieces for stew.

Put the potatoes and cabbage in boiling salted water to cover them for 20 minutes. They should be tender but whole.

In the meantime, sauté the sliced garlic in a frying pan with a little olive oil. When the garlic begins to brown, add the chorizo sausage cut into thin slices or crumbled (depending on how hard it is) so that it releases its fat.

Drain the potatoes and cabbage well. Put the spoonful of paprika in the frying pan with the chorizo and turn once so that it integrates without frying or burning because it is bitter.

Add the potatoes and cabbage and stir for about 5 minutes so that the ingredients are integrated and the flavours blend. Taste for salt and serve immediately sprinkled with parsley.

TRICK

At the last moment, four eggs can be added to the stew (one per serving) to add a delicious touch.
