Keys to a perfect barbecue
If embers are not your thing, don’t worry. At Embutidos Ortiz we believe that everyone can become a barbecue master with a little practice and the right tips.
- Prepare in advance. Make sure you have all the necessary ingredients and utensils at hand. This includes all food, utensils and, of course, enough charcoal or gas for the barbecue.
- Casual tableware. For a fuss-free get-together, opt for fun, disposable plates, glasses and cutlery.
- Correct ignition. Use a barbecue lighter to avoid the taste of accelerators. The embers must be evenly lit and covered with a thin layer of ash before cooking begins.
- Control the heat. Use heat zones on the barbecue: a direct zone (hotter to sear the meat) and an indirect zone (less hot, for slower cooking).
- Suitable tools. Invest in good tongs, a spatula and, if possible, a meat thermometer.
- Marinate for new flavours. A short 30-minute marinade before processing can bring new flavours. Use olive oil, fresh herbs, garlic and your favourite spices.
- Cooking times. Not all foods require the same cooking time. Learn the basic cooking times for each type of food.
- Let the meat rest. Once cooked, allow the meat to rest before slicing. This allows the juices to redistribute, which makes the meat juicier and tastier.
- Food safety. Be sure to keep raw food separate from cooked food, and use different plates and utensils to avoid cross-contamination.
- Cleaning. After each use, clean the barbecue thoroughly. A clean grill is safer and helps prevent old flavours from affecting new flavours.
- Enjoy the process. Finally, barbecue is as much about the process as it is about the end product. Enjoy the time outdoors and the company of friends and family while you cook.
