Chorizo Croquettes

  • 1 l of milk
  • 200 g of Ortiz Barbecue Sausage
  • 100 g of Butter
  • 100 g Wheat Flour
  • Fresh chorizo 200 g
  • Black pepper
  • Nutmeg
  • Egg
  • Breadcrumbs
  • Extra Virgin Olive Oil
  • Go out

Place the Ortiz Barbecue Sausage in a pan without oil and heat it up.

When it has been sautéed, remove it from the frying pan on a piece of kitchen paper to absorb the fat.

Place the butter in a pan and add the flour once it has dissolved. Stir firmly for a few minutes so that the flour is made and little by little we will add the flour without stopping stirring with a stick. The dough must be worked well for about twenty minutes, avoiding the formation of lumps.

Halfway through the cooking time, add the pepper, salt and nutmeg and a little later the chorizo. Mix well.

Transfer the béchamel to a dish, which you will then cover with plastic wrap and leave to rest for a few hours in the fridge.

Shape the croquettes, which can be coated with flour, egg and breadcrumbs or just with egg and breadcrumbs.

Fry the croquettes in plenty of oil (you must cover them completely), take them out on absorbent paper and serve them hot to our guests with a light touch of chives on top.
