Cabbage with potatoes and Chorizo Extra Sarta

The health benefits of cabbage in a rich dish

Ingredients

(For 4 people)
  • 1 medium curly or white cabbage
  • 2 or 3 medium/large potatoes
  • 4 cloves of garlic
  • Chorizo Extra Sarta or Chorizo Barbecue
  • 1 spoonful of sweet or hot paprika to taste

Preparation

We peel the potatoes, wash them and cut them into thick pieces as for stew.

Put the potatoes and cabbage in boiling water with salt to cover them for 20 minutes. They should be tender but whole.

Meanwhile, sauté the garlic in a frying pan with a drizzle of olive oil. When the garlic starts to brown, add the chorizo cut in thin slices or crumbled (depending on its hardness) so that it loosens its fat.

Drain the potatoes and cabbage well. Put the spoonful of paprika in the pan with the chorizo and turn it over so that it integrates without frying and burning because it is bitter.

Then add the potatoes and cabbage and stir for about 5 minutes so that the ingredients are integrated and the flavours are mixed. Taste for salt and serve immediately sprinkled with parsley.

TIP
At the last minute, four eggs can be added to the stew (one per serving) to give it a delicious touch.
